Your Bristol Cocktail Weekend plans could use one more flight of stairs.

Make your way to the top of Milk Thistle and into the The Spirit of Bristol gin Distillery, where Pete Lumber has the gin covered.

There’ll be a Ginocello to start, followed by Bemmie Dry and Clifton Royale Gin with paired tonics, plus the story of how each one goes from botanicals to bottle, right here in Bristol.

Worth the climb, we reckon.

Meet the Montaña. Or, as calls it, the Bellini’s son-in-law.

Peach is out. Jammy fig is in, with pisco, grenadine and a splash of olive brine to pull it all together.

Topped with Prosecco and a black olive.

When our Head Bartender Ben tells you creamy cocktails deserve more attention, it’s worth hearing him out.

His Flying Banshee from the Summer Swill menu combines chocolate and lactic acids, homemade cream soda reduction, banana liqueur, blanc crème de cacao and a healthy helping of vodka, with a whole egg giving it that rich, custardy texture.

Ben’s secret? Shake without ice until silky, then again with ice until properly cold.

Finished with a sprinkle of chocolate flakes - make sure you add this to your next order.
