Martini of the Week, The Hebridean.

Raasay Gin is a standout Hebridean spirit which beautifully combines ten botanicals including juniper, sweet orange peel, Cubeb pepper, rhubarb root and licorice.

It is the first spirit (legally!) to come from the island of Raasay which has a long history of illicit spirit making.
To enhance the aromatic quality of the gin we have given it a little lift with Cocchi Americano and orange bitters.

A generous glug of Isle of Raasay Gin, Cocchi Americano vermouth & orange bitters.
Stirred down and served up with a twist of orange peel.

Behold! The Jerez Gibson!

As we are more than a little bit obsessed with all things sherry at Fourth and Church we just can’t resist adding it to bloody everything! Here we have the classic Gibson, meets dirty martini, meets the south of Spain. In this super salty and complex lil’number.

We have balanced out the sharp silverskin onion with the rich and maritime Colossia Fino Sherry, Beefeater Gin, Boatyard Gin and olive brine. Garnished with an anchovy stuffed manzanilla olive.

Salty goodness.

Come and try!

What a privilege to be invited as a judge at the 14th annual Grenaches du Monde, held in Argelès-sur-Mer under the shadow of the Pyrenees!

Sixty international judges from 20 countries gathered in Roussillon, the historic birthplace of Grenache, to taste, assess, and celebrate its finest expressions 🍇

Morning judging sessions with colleagues from around the world, followed by long lunches with stunning views and afternoons tasting alongside local winemakers.

The vineyards of Banyuls-sur-Mer and Maury provided a particularly incredible backdrop between tastings...

Rivesaltes Ambré is a captivating blend made from 100% Grenache Blanc, aged for many years to develop a luminous amber hue. Tuilé wines age oxidatively in glass demijohns or barrels, developing deep mahogany colours and complex notes of nuts, caramel, and leather. Amber / Rancio wines are aged outdoors in glass bonbonnes and wooden casks to develop rich, complex notes of dried figs, coffee, and nuts.

Take me back... 🍷

'Gordon’s, one of vodka, half a measure of Kina Lillet. Shake very well until it’s ice-cold, then add a large, thin slice of lemon peel.’ James Bond.

In 1953 Ian Flemming immortalised this martini in his Bond debut novel Casino Royale, and named it after the double agent Vesper Lynd. To present a more rounded, but still potent martini, we have taken some liberties with the recipe. Sorry James, but a martini must always be stirred, and never shaken!

Boatyard Gin, Mykolasch corn Vodka & Cocchi Americano stirred down and served with a twist.

Best served with Nocellara olives

Come and quench your thirst.

Behold! The Caper Berritini!

The sun is finally here, it's the beginning of a Bank Holiday and Brighton and Hove is alive with culture. What better way to celebrate than with our Martini of the week?

Rich Mikolasch corn vodka from the Ukraine receives a cheeky lift with rosemary and preserved lemon infused caper berry brine. Pulled together with a dash of Cocchi Extra Dry.

This nod to the infamous dirty martini is packed with fresh acidity, salinity and naughtiness. Just how we like it.

Best served with a gilda of anchovy, vodka preserved cherry tomato, pickled onion and anchovy stuffed olive.
