One of our OGs! Sticky Rice has officially been on the menu since Day 1. We have been threatened on multiple occasions that removing it would result in boycott, harm and the possible release of a certain shopping channel video [I’ve already said too much].
In an attempt to capture the magic of sitting on a tiny plastic stool in the sweltering heat of Khao San Road, we cook white rice with roasted coconut and pandan leaf before blending with coconut milk (both figuratively and literally). Separately, we add pandan to salted coconut water (which is super fu***ng tasty BTW) and then lacto-ferment alphonso mangos, we know no one cares about this bit but it’s preserves the short availability of mangoes and makes them funky and delicious! So, after all that work… and it is a whole lot of work let me tell you, we throw all three elements together (again, literally!) an it goes in a rice bowl because serving in on a plate is a really terrible idea. That’s it. Sticky Rice. I forgot to mention, there’s no booze in it but it’s tasty AF so who cares.
