Sous Chef
Job Purpose
Under the general guidance and supervision of the Head Chef, the sous chef will assist in the preparation and service of all sections in the kitchen.
In the absence of the head chef, the sous chef will oversee the kitchen by monitoring other members of the food preparation team & be responsible for stock rotation and the ordering of fresh stock.
Duties and Responsibilities
Reports to the Head Chef directly.
Ensure that the kitchen is kept clean and tidy.
Ensure that all prep is completed in time for service.
Ensure that all tickets are correct and Chef receives them.
When assisting the kitchen assistant, ensure that point of contact is made with the customer as ticket is received by the delivery of cutlery.
Assist with stock take as required.
Ensure that all kitchen equipment is looked after and well maintained.
Ensure that you are polite and friendly to all customers.
Wear proper uniform at all times.
Ensure that the highest standards are always met.
Follow all reasonable instructions from Chef & management team.
Practices good personal hygiene principles.
Ensures that all food items are prepared on time and meet quality and quantity standards.
Maintaining of cleanliness in all assigned areas including refrigerators/freezers.
Performs duties common to position and other duties that may be assigned.
Controls cost by minimising spoilage, waste, proper storage and exercising strict portion control.
Ensure weekly jobs sheet is completed, signed and dated.
Determine how much food to order & maintain an appropriate supply for the kitchen to maintain daily running.
Check freshness of food and ingredients.
Work quickly and accurately during busy periods such as weekends and events.
Acts with appropriate caution in a dangerous environment where there are knives and high temperature surfaces.
Support the head chef with the creative development of menus & food nights.
Has a positive and enthusiastic attitude
Works well as part of a team
