Tasting of The Century - Thursday 17th September, 7pm

Dave Cummins, aka Beardy Dave, brings Di**le Distillery to the Century. A guided tasting through their whiskey collection, a signature cocktail, and a charcuterie board in between. Dave knows his whiskey and he knows Di**le - expect stories as good as the drams.

Di**le Distillery Di**le are coming north, and they are bringing Beardy Dave with them.

Dave Cummins Dave Cummins is Di**le’s Global Brand Ambassador, and if you have been to a whiskey festival anywhere on this island you have probably already met him. He is the fella who pours you the dram, tells you the story behind it, and somehow makes an hour feel like ten minutes. Ask anyone who has sat through one of his tastings. They remember it.

Di**le is the real thing. Independent, family-owned, first spirit off the stills in a converted sawmill in Milltown back in 2012, and the first independent Irish distillery in decades to put out a single pot still. Small scale by choice. Quality over quantity, always.

The uniforms are pressed, the lunchboxes are packed, and Thursday night belongs to you again. 7pm at The Century Bar, we’re heading to Spain - Rioja, Ribera, Rías Baixas and beyond - with our sommelier Kirill pouring, talking and pairing each one with some cracking cheeses.

If you’ve been to a Wine Club night before, you know the drill: Kirill makes it effortless, nobody gets quizzed on tannins, and the chats are half the reason people come back.

TASTING OF THE CENTURY: CROITHLÍ IRISH WHISKEY

Donegal is coming to Ballynahinch.

On Thursday 20th August, we welcome Caomhan Mc Menamin and Croithlí founder Conor McMenamin to The Century Bar for a very special evening of Irish whiskey, history and storytelling.

Croithlí has brought legal whiskey distillation back to Donegal for the first time in 180 years, reviving a remarkable distilling heritage in the heart of the Donegal Gaeltacht.

And this isn’t your usual whiskey tasting.

We’ll explore the influence of three completely different types of oak through Sessile (Irish Oak), Alba (American Oak) and Robur (European Oak), before moving into some particularly special pours.

You’ll even taste Croithlí’s new-make spirit straight from the stills, giving you the chance to experience the spirit before the oak has had its influence.

Croithlí produces its spirit using vintage French Charentais Cognac stills heated by direct fire. The open flame creates Maillard reactions during distillation, while the high copper contact helps create their distinctive rich, oily and aromatic spirit.

TASTING OF THE CENTURY - Thursday 20th August, 7pm, Century Bar, Ballynahinch.

Donegal hadn’t made legal whiskey in 180 years. Then Crolly happened.

In a 1901 stone building that made carpets for Buckingham Palace, housed a barracks through the War of Independence, and turned out the world-famous Crolly Dolls for four decades — a group of friends from the Gaeltacht brought distilling back to Donegal in 2020.

On the 20th, a co-founder of The Crolly Distillery and his son bring that story to the Century - a father and son pouring their own whiskey.

In the glasses: the Croithlí range, double-distilled over an open flame in ex-cognac copper stills - including their brand-new Oloroso cask release, only weeks old and already flying - and a rare pour of new make spirit, the raw liquid straight off the still, so you taste exactly what goes into every cask.

6 whiskies. £30 per person. One small charcuterie board too

TASTING OF THE CENTURY - Friday 31st July, 7pm, Century Bar, Ballynahinch.

Gareth Irvine, founder of Copeland Distillery, and brand ambassador Corey Fitzpatrick are bringing Donaghadee to Ballynahinch for one night, six Copeland whiskies, poured and told by the people who made them.

Our pour list is including their award-winning Single Grain, Best in the World at the 2025 World Whiskies Awards, and the limited releases that gave Northern Ireland its first Chocolate Malt and Pot Still whiskeys.

Gareth and Corey will also talk you through Copeland’s Cask Share programme - how you can own a share of a maturing cask at their harbourside distillery in Donaghadee. Want to see it for yourself? Distillery tours run every Saturday and book out fast: copelanddistillery.com/tours
