When our chef is invited to showcase his talent, it becomes more than just cooking — it’s a journey through the history and soul of each dish.
Franco brings a rare depth of knowledge, understanding not only how to cook, but why each dish exists, where it comes from, and how it has evolved over time.
With a background in Law, his path into the kitchen was a conscious and passionate choice. His true education came from home — learning alongside his mother and aunties, where food was not just prepared, but shared with meaning, care, and tradition.
In my view, he is exceptionally intelligent, and this shows in his approach to food. His cooking is grounded in fresh, seasonal produce, elevated by the thoughtful use of aromatic spices that honour his heritage.
Every dish he creates carries both precision and emotion — a balance that is not easily taught, but deeply felt.

Franco once cooked for the Gucci family.
I also had the chance to visit a beautiful winery in Florence, in Tuscany.
Everyone there knew him.
They spoke about his time as a chef and shared lovely stories.
What touched me the most is how humble he is.
Even with all this experience, he is here with us in Aberdeen,
cooking with care and sharing real Italian food.
Food made with love, tradition, and honesty.
