Black tomato Mistelle, dry vermouth & tomato vine spirit.

Heirloom black tomatoes, infused, juiced, blended & filtered to produce a rich and savoury Mistelle w**e style base for our second iteration of tomatoes. We balance with a herbal and light dry vermouth to avoid overpowering the deep tomato profile and further the tomato flavour with a highly aromatic infusion of tomato tops and vines that we collect through the year.

Finished with 2 tomato skin oils, one orange & one red. 🍅🍅🍅

The Sausage Roll 🌭 (we know it’s a hot dog okay)

It’s had many variations along the way since our first pop up, from duck offal to pigeon trim and everything in between it’s still going strong.

Our latest edition uses Black Bigorre pork & fennel seeds and is served alongside our latest brown sauce made from reine saint claude plums, blackened pears & seabuckthorn leather.

The sausage roll & brown sauce combo allows us to reduce waste not just from proteins across the wider menu, using offal, off cuts & fats that would otherwise go unappreciated in the sausage meat, but also a variety of byproducts and pantry items make up the brown sauce that allow us to elongate the shelf life of various fresh produce through the year 🫗

Rosé & Raspberry Sorbet, Raspberry Rosso Vermouth, Cryo Rosé & Raspberry Eau De Vie 🍷🍓

The first drink on our five step drink tasting menu for the last couple of weeks during the height of berry seasons before we hit peak stone fruits. 🍇 🫐

Raspberry rosso vermouth blended with cyro concentrated rosé w**e and a dash of rapsberry eau de vie.

Poured over a raspberry & rosé sorbet made using the raspberry solids & rosé water left over from making the concentrated w**e & vermouth in the liquids.

Recognition from our peers is always humbling, wherever in the world it comes from, but to stand among the bars that have inspired us most, both here in Paris & across the globe, is something we will never take for granted. 🥹🙏
