Meet Cédric Moussé . Rooted in the deep green clays of Cuisles, the Moussé family has been growing Meunier since 1629. Twelve generations in the vineyards, four behind the press, and each one added its own layer of precision, patience, and respect for nature.⠀

This unique clay, called illite, is more famous in cosmetics than in Сhampagne and is typical of the Cuisles area. Here, it shapes wines of remarkable depth, giving Meunier an extra dimension: volume, but without weight, roundness balanced by a vivid mineral edge.⠀

But nothing here happened with the wave of a magic wand. Behind every choice stands Cédric, a fourth-generation winemaker whose vision blends engineering precision with an almost spiritual bond to his land. Long before “sustainability” became a buzzword, he was already redesigning the entire estate to reduce its carbon footprint. Solar panels now power the cellar and tasting room, making the domaine almost entirely self-sufficient.⠀

In the vineyards, pigs and chickens wander freely - natural gardeners that turn the soil, eat the weeds, and keep life in balance. Harvesting is done only in small crates to protect every berry, and even the sulphur comes from volcanic rather than petrochemical sources. Every little detail counts, every choice has a reason.⠀

What’s fascinating is how effortlessly technology meets intuition here. Cédric follows lunar rhythms and biodynamic principles, yet none of it is blind faith. Every ritual, every natural method has been tested and proven to outperform conventional practices. We had the chance to witness some of these trials ourselves, and yes, they truly make a difference. We may not fully understand why it works, but we’re certain that it does. This is a domaine where innovation doesn’t replace tradition - it evolves from it.⠀

Some wines are made to please, others are made to mark history. Last week at Bubble Bliss, we had the privilege of introducing one of those legends: Champagne Charlie by Charles Heidsieck

Many of you already love the Maison’s prestige cuvée Blanc des Millénaires - that elegant expression of Chardonnay perfection. But few have met the house’s other jewel, and there’s a reason for that: extreme exclusivity.

It has been released only five times in the entire history of the Maison: 1979, 1981, 1982, 1983, and 1985. Then it vanished, becoming one of those mythical bottles collectors dream about.

But legends have a way of returning. In 2022, Champagne Charlie was reborn, paying homage to the spirit of its original creator, Charlie Heidsieck himself. Instead of flooding you with technical details, let’s just say this: the new release draws its soul from one of the house’s most precious treasures - a 1996 Chardonnay reserve wine from Cramant, blended with the depth and maturity of the maison’s remarkable reserve wines.

To unveil this exceptional cuvée, we had the honor of hosting Émilien Érard , the new Chef de Caves, and Willem Pinçon () for two insightful masterclasses reserved for a small circle of sommeliers, restaurateurs, and Champagne enthusiasts, followed by a soirée worthy of Charlie himself.

What made the evening unforgettable wasn’t only the rarity of the bottle, but the cozy ambience. Guests gathered around the bar, tasting, exchanging stories, and discovering details usually shared only behind the doors of the Maison’s cellars. That night Champagne didn’t wait to be visited - it came to us.

And that’s exactly what we aim for at Bubble Bliss: to bring Champagne closer to those who love it as much as we do. Merci, Émilien. Merci, Willem. And merci, Charlie - for the sparkle, the stories, and the reminder that true legends always return to those who believe in them.

Meunier remains one of Champagne’s most undervalued grapes - a paradox, given it covers nearly a third of the region’s vineyards. Long seen as the supporting act to Pinot Noir and Chardonnay, at the same time carried Champagne through its hardest seasons.⠀

It buds later than its famous cousins, making it less vulnerable to frost, especially in the low-lying areas where cold air tends to settle. It ripens early, adapts beautifully to the heavy clay soils of the western Marne Valley, and gives generous crops even in tricky vintages. The reliable friend every winemaker needs. But…⠀

In the glass, Meunier can be controversial. With its typical notes of ripe apple, peach, and quince, it adds roundness and body to blends. But for decades, that same fruit-forward character made it seem too easy, too soft, not “serious” enough. And when not handled with care, Meunier could lean toward green, metallic, or oxidative tones - wines that felt almost tired even right after release. Cuvées dominated by Meunier were rarely seen as elegant or age-worthy. Tradition labeled them pleasant but simple - a stereotype that took time to break.⠀

The truth, of course, is different. The grape was never the problem, it was just waiting for the right hands. In recent years, a new generation of vignerons has completely changed the perception. Emmanuel Brochet, Alexandre Lamblot, Rousseaux-Batteux, Benoît Déhu, Jérôme Dehours, Mathieu Nicolas, Cédric Moussé, Alexandre Chartogne, and others have shown that Meunier, when respected and understood, can express excellent depth and clarity, while keeping its charm and accessibility at the same time.⠀

Clay gives power, fruit gives texture, and the best winemakers bring balance. The result? Champagnes full of freshness, precision, but with that fruitiness that Meunier can deliver.⠀

Now, just like the so-called “ugly duckling” (that, in truth, never was), Meunier has grown into a graceful swan, becoming one of Champagne’s most expressive and beloved voices, and we’re happy to share the best of it with you!⠀

Non-Vintage vs Vintage: what the year on a bottle of champagne really means

If you see a year on a champagne label, congratulations - you’re holding a millésime, or a “vintage champagne” made from a single harvest. But most bottles don’t show a year at all. Why?

Because they’re non-vintage (or NV) - a blend of wines from different years. And that’s not laziness, it’s the brilliance of the most northern winemaking region in France, where weather is famously unpredictable. Blending allows champagne houses to maintain their signature style no matter what the season brings. One year gives freshness, another adds depth, a third brings richness - and together they create consistency, elegance, quality, and balance in every bottle.

Vintage champagnes (millésimés), on the other hand, are like time capsules - a snapshot of one particular year, bottled with all its character and challenges. They’re made only when the winemaker considers the harvest exceptional, which makes them rarer and often more complex.

So which years are universally great? Think 2002, 2008, 2012, 2019 - safe bets, no hesitation needed. Years to approach with caution? 2011 or 2017. But be careful with judgments - champagne often proves that a talented winemaker can turn even a tricky vintage into something remarkable.
