FLOR DE CANA CHALLENGE
Outta road is a cocktail designed as part of the Flor de Cana Sustainable 2023 competition. To make this cocktail we chose to reuse bar ingredients intended to be thrown away.
We had a surplus of mint leaves that we use to infuse the rum with.
Instead of sugar sirup we created an oleo saccharum of citrus zest.
Mango skins were infused in a bitter to add a note of roundness and add spice to the cocktail.
In order to avoid the use of ice cubes, which are not sustainable at all, the dilution has been calculated beforehand and added in the form of liquid water to the cocktail.
Finally, for the decoration of the cocktail, we create a fruit leather by reusing the skins and flesh of citrus fruits after pressing the juices for the service.
