ASSEMBLAGE —

L’assemblage est un véritable moment de création, fort et engageant.

Autour de la table de dégustation, les vins clairs vinifiés aux dernières vendanges attendent leur destin. Chacun porte l’empreinte d’un cépage, d’une vigne, d’un sol, mais aussi l’histoire du millésime… Ils sont dégustés un par un, identifiés, décrits, classés, comparés, imaginés ensemble…

Françoise, Baptiste, Patrick et Rémy vont les marier pour trouver l’équilibre parfait entre fraîcheur et aromatique ; pour apporter structure et complexité ; pour préserver le style de la Maison et l’identité de chaque cuvée.

Blending is a truly creative moment, both intense and engaging.

Around the tasting table, the base wines from the most recent harvest await their destiny. Each bears the imprint of a grape variety, a vineyard, a soil, as well as the story of the vintage… They are tasted one by one, identified, described, classified, compared, imagined together…

Françoise, Baptiste, Patrick and Rémy will marry them to achieve the perfect balance between freshness and aromatic expression; to bring structure and complexity; to preserve the House style and the identity of each cuvée.
