One of her favorite dishes to share. Perfect for vegetarians, vegans, or anyone looking for a break from khachapuri (yes, we know - that’s almost impossible).

Thin, freshly baked dough filled with a flavorful red bean mixture and Georgian spices, topped with pickled carrots and the one ingredient that simply has to be there: jonjoli.

Behind every qvevri are months of craftsmanship.

We visited Zaza Kbilashvili’s workshop, one of the few in Georgia still producing traditional qvevri entirely by hand.

Made from local clay rich in iron and minerals, sourced just a few kilometers from the family home, each vessel takes around three months to complete and is shaped entirely by eye—without molds or measurements.
