Every stone in Provence seems to have a history. Did you know the classic pavers here are often made from pierre de Bourgogne? It’s been used for centuries in the South of France, not just because it’s beautiful, but because it lasts.

It’s not every day you see your butler on ice skates, but wouldn’t life be dull without a little whimsy?

It reminds me of a dinner I organized a few years ago on a hillside in Norway—completely impractical, completely magical. That’s the thing about excellent service—it’s about creating moments that linger in your mind long after the champagne bottles are empty and the plates are cleared.

It’s funny how moments like these—utterly charming, slightly absurd—stay with you. They remind me that hospitality is about more than service. It’s about creating memories that make people smile long after the ice has melted. And that’s something I try to carry with me, no matter what the season.

Let’s get one thing straight—sad, industrial croissants do exist in France. Locals and tourists alike share their boulangerie recommendations like generous gifts, saving their fellow man from mediocraty.

It’s shocking how long you can live in a place and not know a life-changing loaf of bread was three streets over from the usual route.

Flying over the Alps puts things into perspective. There’s something about trading grey skies for Mediterranean light that’s been irresistible since the Victorians started flocking here with their steamer trunks and porcelain tea sets.

How many Britons flew in to Nice from London last winter? Over 170,000, if you can believe it. It’s not just a trip—it’s a tradition. And every time I see these snowy peaks, I imagine those first travellers making the journey by train, dressed to the nines. Quite a different pace from today’s direct flights to Nice, (the third busiest airport in France) but the anticipation—quite lovely knowing that a chilled bottle of white and an open terrace are waiting on the other side. The only question is: will I even unpack today?
