This rich braised pork belly was the beloved comfort food of Chairman Mao, who grew up in Hunan province. Slowly simmered in dark soy sauce, rock sugar, and spices, it becomes melt-in-your-mouth tender with a glossy, deep flavor.
Mao himself believed pork gave strength, even joking, “You can’t be a revolutionary if you don’t eat pork.” Decades later, Hunan officials even promoted it as healthy, noting that pork belly fat contains oleic acid — the same heart-friendly fat found in olive oil!
Whether healthy or not, this rustic comfort food was transformed into a kind of “revolutionary health food,” linking the dish to strength, vitality, and Mao’s larger-than-life persona.
