Shortbread has roots in 12th century Scotland. Early versions came from leftover bread dough dried in low ovens. Bakers replaced yeast with butter over time. The result became the rich biscuit known today.
Mary Queen of Scots helped refine shortbread in the 1500s. She favored the wedge shaped version known as petticoat tails. The name links to the shape of royal petticoats worn at court.
