Filled today - a new but old favourite with a word taken out of the name.
Pretty sure i’m not the only one who loved this pale ale and loved even more the place it was the house beer for.
Not to dwell on the past too much, but Ace pizza is a massive loss for Hamburg.
However, Tommy was so kind as to let us continue the beer, Sina let us use her design work and they even made the effort to do their remote brewing and this batch is as tasty as ever.
Full of Enigma, it is a joy to drink.
Enjoy the good things while they’re here.

As a glorified homebrewer myself I was always excited when breweries released recipes or brewers talked about processes.
So here’s the base recipe for Ale to the thief.
Because it’s a different hop every time I have to adapt the hop additions but the timings and IBUs always stay the same.
If anyone needs help sourcing ingredients or has questions, just ask!

As a glorified homebrewer myself, I found it great when breweries released recipes or brewers talked about processes.
So here’s the recipe for Ale to the thief. It’s brewed every time as a single hop with a different hop so I have to change the amounts but the IBUs listed always stay the same.
Hope some of you find this interesting and / or useful and if any questions or if anyone wants help sourcing malt / hops just comment or send a message.

Been a while.
Had some broken machinery so it’s taken a while to get brewing again.
What better way than to return with our most popular HITCHCOQ collab - IPA Loompa. This time re-hopped with early harvest Nelson and Peacharine and finished off with a little trial product hop Kief.
We get sharp line cutting through the gooseberry and tropical fruits. Sweet but zesty.
Release party is Saturday at HITCHCOQ

New beer available online now.
Our new buddies from came over and we brewed a delicious West / Mid Coast IPA.
We decided to showcase an interesting hop we‘d not used before - NZ Cascade. It’s quite different to the American version - more sweet fruits than grapefruit.

Malt wise we added 4% light crystal malt to deepen the colour and increase the body and 6% dextrose sugar to help increase attenuation.

Result is a dangerously drinkable IPA that goes down the hatchet without much resistance.

NRW-ers.

Jochen & Monty from made a beer with me. We took their Hoppum IPA recipe and adapted it to 2026.
Packed full of NZ Cascade from Freestyle with a touch of Simcoe and Columbus to add just enough dank.
A touch of light crystal malt to deepen the colour and 7% dextrose sugar to keep the body light.

It’s one of those dangerously drinkable perfectly balanced IPAs.

We’d love to see you at on Saturday 13th from 17.00 to drink it together and have a nice evening in their pretty little beer garden.

I’ll be there a bit later due to another commitment in Duisburg, but Jochen and Monty will hold the fort for the first hour or Two!

New K2 IPA.
This time single hopped with Nelson Sauvin. Early harvest in the whirlpool and dry hop for some gooseberry and citrus goodness. Then finished off with a trial product from - Fresh harvest hop kief which adds just the right amount of weedy dankness.

It’s good.
It’s limited.
It won’t last long.

Happy beer day, Germany.

But.

Imagine a law that is so arrogant to claim that only what they believe can be called beer is allowed to be brewed here (and called beer).
It sounds almost like something the orange man over the Atlantic would say.

Want to brew a dry stout with delicious roasted barley and put „beer“ on the label? IT IS NOT ALLOWED here.

Want to use plastic to filter your beer almost instantly? That’s fine.

I think I’m preaching to the converted here but it does need highlighting how absurd it is.
