Dearest guests, our last day will be Friday 07. July

NOMU opened its doors two years ago to celebrate Japanese cuisine and, most importantly, sake. As time passed, I found my love to spread the knowledge of sake grew and grew, and a new project   sprouted in Wedding. Over the last year I realised that I couldn’t manage both and made a very difficult decision to close NOMU.

NOMU started as a passion project from a desire and longing to visit Japan and its sake bars in 2020 during the pandemic. I was determined that since I couldn’t visit Japan, I will bring a sake bar to Berlin. Without experience in the hospitality industry, I was lucky to find a wonderful team that helped guide me. What started as an A La Carte casual restaurant quickly evolved and I am very proud of what we managed to accomplish in a short time together. 

It’s been a wonderful journey with NOMU and as we close one door, our team is looking forward to the new adventures that lay ahead. Thank you to everyone for their support and we hope to see you one last time for dinner service. 

This is not a goodbye! I look forward to seeing you again at SUI SUI where we can learn more about sake together.

What is Ankimo? We call it the fois gras of the sea - a pâté made from the liver of monkfish. The liver is often thrown away and unusable; when waters are rough and the fish is stressed the liver quality becomes unedible. But those rare moments we receive a liver we make magic 💫

Ankimo takes a full day of work and 2 or more cooks to prepare! Once preparation begins, it must be completed the same day. We serve it a different way each season. For this menu its called Ankimo Saikyo Yaki - lightly seared on the outside with a side of pickles and a miso dipping sauce. A savory, fatty umami bomb cut through with small nibbles of acidity.

Beautiful orange pearls of salmon roe with marinated sea trout, this dish is called Momiji Zuke from Iwate prefecture. We used koji to marinade the sea trout, a mold that is very important in sake production. It helps to tenderize the meat and creates a delectable sweetness.

Introducing one of our favorite sakes at the moment from NichiNichi Shuzo. Made in Fushimi, Kyoto, this is the first produced batch (or as we say the first baby born) of the brewery by Toji Hidehiko Matsumoto. With his signature style, initial sensations of lightness and effeversence brings joy and happiness. Then layers of beautiful acidity, notes of tropical fruits like pineapples, light bitterness from the Yamadanishiki rice and dryness comes in waves. This sake is a complete delight for the senses.

Don't be fooled by it's simplicity. Our Shyouga Miso Oden is a beautiful burst of flavor thanks to the delicious broth and miso dipping sauce. This way of serving Oden originated during the post-war yami-ichi market stalls when the merchants served Shyouga Miso Oden to warm customers up in extremely cold winters. Come and warm up at Nomu with Oden and hot sake.
