Just as love is born, from the mixture of different feelings, our Jazz Café Restaurant Trinidad Cuba was born. A mixture of the culinary initiative of an excellent Cuban master chef, the local culture and the love for jazz. It all started in the summer of 2020, my father, culinary master chef at the FORMATUR school in Trinidad Cuba, today with more than 20 years of experience, missed every morning
the smell of a Caribbean kitchen, his students and the indescribable feeling of put on his chef’s outfit. Every day he got up and did nothing but talk about cooking, until we stopped talking about setting up a restaurant while we finished a Cuban coffee on our terrace
The idea sounded so real that we instantly set out to find a venue. When a month when they told us about a space, located in the downtown street of the city that was for sale, Jazz Café Restaurant, I liked the name and the place was wonderful. My father entered and went straight to the kitchen, reviewed every detail and expressed:
Specialized in providing unique experiences through gastronomy and music! Without further ado, we already had our slogan, but we lacked the menu. The next day I will never forget my father listening to Billie Holiday as she baked our first dessert, The Big Band, a dish capable of playing a melody of flavors. For me everything was clear, we would pair the good taste of true tropical cuisine with live Jazz. The Big Band
Specialty of the Jazz Café Restaurant
With more than 20 years in the Dulcería Bakery on the part of the family, it is to be expected that our best dishes are related to dessert. We currently offer The Big Band. A dessert created with the aim of honoring those great jazz bands that were born in New Orleans and representing it as a social, cultural, idiosyncratic and racial phenomenon. Through this creation, our chef sweetly thanks everything that jazz has done for people over the years, which was undoubtedly an inclusive cultural element; liberator and binder. This gastronomic delight arises from the combination of three desserts in which chocolate is the protagonist, represented by a brownie, a sponge cake and a pancake. Three preparations that generously imitate a big jazz band, where mix and creativity play their melody of flavors. To decorate, cream is used, alluding to how Afro-Americans mestified and merged in relation to the art of music, until jazz was created. As well as our dessert The big band, which joins us in a unique gastronomic experience at the Jazz Café Trinidad Restaurant.
