is back! With a big bang 💥 Meet Andonis Andrianos / the NEW chef de bar of the legendary Brick .

1. What were the biggest challenges when You took over the Brick Bar as the new Bar Manager?
I definitely feel the weight on my shoulders heavy after taking over from Patrick. I mean, he opened the place, was there from day zero, literally built the Brick, brick by brick and he shaped the bar’s ID. What approach should the next manager take? Luckily for me I was already two years working there before my years break and all the customers already knew me so that definitely helped, plus I love ( and I think I understand) the Brick to it’s core, same like Patrick does so we start from there.
Now next challenge is to take my time to figure out where/ how I can fit my part in the brick experience from the customers perspective, without spoiling it’s success and character but also put my personality in the funky drinks we make and maintain the overall vibe in the place same as Patrick did, keep the team motivated and happy to keep working for us etc. I’m very excited to see every week passing, evaluate and plan the next ahead. Looking forward for the future now that the bar scene finally feels normal again.
2. You play in a music band, do You find any similarities between bartending and being a musician? If yes, what are they?�
Certainly there are a lot more similarities than differences. As a musician in a band you have to be coordinated with a group of people for a common goal, create content, promote it, exist in synergy, learn how to overcome conflicts, make sure your performance is always top of your game regardless your personal/ private struggles, do steps back from your own perspective to listen and accept others opinion too if it’s for the greater good of the overall goal and others should be prepared to do as such.
Also on the “ performance” aspect, when you are there, presenting and selling the product to the people/ customers, every move and detail has to be there otherwise you don’t pass the right message to the consumer. Maybe part of the reason I love both bartending and playing music is exactly because they are that similar.
