Braised Lamb Shank
Slow-braised until fall-apart tender, this is comfort done properly. Rich, deeply savoury lamb resting on a cloud of whipped potato, surrounded by roasted winter vegetables and a mix of wild & cultivated mushrooms for that earthy depth. Finished with a generous pour of silky lamb jus.
Pair it with a glass of Château de Courteillac Bordeaux 2021 — dark fruit, supple tannins, and just enough structure to stand up to the richness of the lamb.
