I took some lovely photos of our popular Hououbiden Ume and Yuzu sakes, and wanted to share a bit more about each of them:

Ume - Made from the local plum variety Miyano Ume and infused with Hououbiden's Ginjo sake for a minimum of one year, this umeshu is intense and concentrated, with pure plum aromas and flavours. It has a silky texture, refreshing acidity, and a long, elegant finish.

Yuzu - Crafted using only fresh yuzu infused into Hououbiden's Ginjo sake, this vibrant yuzu liqueur is pure, concentrated, and full of bright citrus character. It delivers lifted yuzu aromas and flavours, accented by a subtle hint of peel bitterness. Enjoy it neat, on the rocks, or mixed with soda or water.

Those people you know kinds of sake!
Extremely limited in production, "Takasago" is a historic line that was once sold only locally, revived in 2018 by Kiyasho Shuzo.

A contrast to the bright and vibrant character of Jikon, Takasago showcases a more restrained and refined expression. Brewed using the traditional Kimoto method, it offers beautiful depth and quiet complexity, with elegant layers unfolding gracefully on the palate.

We've shared two Japanese wines already - now it's time for the final one🍷✨

Toriivilla Imamura
Yamanashi, Japan

Toriivilla is a southwest-facing steep slope with excellent sunlight exposure and drainage, rare mineral-rich soils, and a large diurnal temperature range created by the cool winds from Mt. Fuji (known as Sasago-oroshi). These conditions make it an ideal terroir for producing the highest-quality grapes. The terroir of Toriivilla, the finest in the Katsunuma area, can truly be described as “Japan’s Grand Cru.”

Toriivilla Imamura is the largest landholder of this exceptional vineyard. Historically, the superior quality of these grapes is well-documented: records show that Toriivilla grapes were offered as “top-quality goods” to the Tokugawa Sh**unate in the 17th and 18th centuries. Despite the 120 km journey to Edo Castle, when most harvested grapes lost their refreshing acidity, only grapes from Toriivilla retained their vibrant, refined freshness—hence they were chosen as offerings for the Sh**un. This legacy illustrates the remarkable longevity and aging potential of wines made from these grapes. Indeed, the Imamura family owns a rare collection of century-old wines, a true testament to their heritage.

Newest arrival of Japanese wine🍷

Domaine Mie Ikeno
Yatsugatake, Yamanashi, Japan

In 2007, Mie Ikeno started cultivating wine grapes on the hills at the foot of Mt. Yatsugatake. She took her first steps with the desire to "make high-quality wine using 100% grapes from her own fields." Four years later, when the grape vines finally began to produce small clusters, they built a winery and gave birth to Domaine Mie Ikeno, which handles everything from grape growing to winemaking in their own fields and winery.

Domaine Mie Ikeno is the first winery in Japan to use a gravity flow system in the cellar. This method eliminates the need for pumps, minimizing mechanical labour, and ensuring the wine can be handled very gently, making it possible to create elegant and distinctive wines without compromising the delicate characteristics of the grapes.

Say hello to our brand-new Japanese wine! 🇯🇵🍷

Hirakawa Winery
Yoichi, Hokkaido, Japan

Founded in 2015, Hirakawa Winery is located in Yoichi on the East Sea coastline of Hokkaido island. The 5 hectares of vines are planted across a beautiful hillside with sunny southern exposure, thriving in the balanced climate of cooling sea humidity and fresh dry mountain air. The winery expresses itself through sustainable, low yielding, high quality grape production. Obtaining this level of quality requires rigorous growing management that fits with the climate, the soil, and the selected grape varieties.

The estate owner, Atsuo Hirakawa is a sommelier, agricultural engineer and oenologist. He has worked as a winemaker in some prestigious terroirs in France such as Margaux, Puligny-Montrachet, and Chinon, as well in South Africa, New-Zealand and Japan.

What a fantastic event we had on June 26! We’re incredibly grateful to everyone who joined us—and especially to the amazing sake and shochu producers who traveled all the way from Japan to be in Canada.

It was a rare and special opportunity to meet the people behind the brews, hear their stories, and learn directly from the experts. It was a truly unforgettable event!

This is a rare opportunity to gain insight into each maker’s individual philosophy, expression, passion and techniques in sake making.
