What are nitrates and why should you avoid them?
Nitrates are a preservative that are not broken down by stomach acid. Instead, your gut biome can break down nitrate into nitrite, which can cause health complications such as an increased risk of cancer. Some food with added nitrates include ham, deli meat, hot dogs and bacon.
