We are forever grateful to our guests when they take the time to share their experience with us through social media.
Every day our main focus is to knock our service out of the park. Our prep team arrives early morning to begin the cooking process. We run a scratch kitchen. Sauces, pastas, breads, pizza dough, desserts, condiments, braises, everything we serve is prepared in house.
Mid-day the evening teams arrive. The morning chefs turn the kitchen over to the night chefs - the men and women who run the lines during service. They transport the kitchen to be service ready.
At the same time, our front of house team readies the dining room. Floors are mopped, tables set, glasses and flatware polished and sections thoughtfully distributed.
Each team discusses the evenings reservations and how they will execute the flow of guests.
Every detail is considered and yet sometimes we disappoint.
Please know that when we do, we feel gutted. Then we look at how we can improve, do better and move on.
We love what we do.
