"With Gratitude and a Full Heart"
Dino Cipolla Says Goodbye
After 45 years in the restaurant industry, Dino Cipolla is officially stepping away. As the longtime owner of Red Brick Pub & Eatery in Hampton and Amici Pub & Eatery in Quispamsis, he leaves behind not just two beloved establishments, but a legacy built on heart, hustle, and hospitality.
âItâs not easy to step away,â Dino says. âBut Iâm leaving with a full heart, deep gratitude, and a lifetime of memories.â
From the beginning, Dino wasnât just focused on food; he was focused on how people felt. âWhat Iâm most proud of isnât just what we built, but how it made people feel. I always tried to make our restaurants places where everyone felt welcome.â
And people did feel welcome. Many of them for decades. Over the years, Dino served three generations of customers, watching families grow, hearing stories of first dates, anniversaries, and even chance encounters that all started at his tables.
âWhen Red Brick caught fire, I really wasnât sure if reopening was the right move,â he recalls. âBut the outpouring from the community made the choice clear. This was never just my restaurant. It was theirs too.â
Behind the scenes, Dino credits his wife, Christine, as a constant pillar of strength.
âTo Christine, thank you,â he says. âYou stood by me through long hours, missed holidays, and everything in between. None of this wouldâve been possible without your love and support.â
Dino also takes time to thank the many staff members who helped shape the warmth and energy of both Red Brick and Amici.
âTo every person who worked with me, thank you. You helped create something special. You made these restaurants feel like home.â
As Dino moves into retirement, he does so with confidence that both restaurants are in good hands. The new owners of Red Brick have already begun writing their next chapter. Over at Amici, the restaurant is being led by someone Dino personally mentored: Cody.
Cody reflects on their time together with deep respect.
âI always had a great relationship with Dino,â he says. âWhen he offered me a chance to come on board, it felt like the right time and the right person to work with. He gave me the opportunity to return to the service industry in a meaningful way.â
âHeâs like family to me. He genuinely has a great heart and truly caresâabout his business, his people, and his community. One of the biggest things he taught me was to have confidence in myself. Not to take things at face value, but to trust my instincts and believe in what I bring to the table.â
For Dino, his message to those stepping into the industry, especially those taking the reins at Red Brick and Amici, is simple:
âWelcome every guest the way youâd want to be welcomed. Treat every table like family. Let kindness, patience, and care guide every decision. That spirit is what built these places, and itâs what will keep them thriving.â
As for whatâs next, Dino is looking forward to slowing down, spending more time with his grandchildren, staying involved with Valley Sands in Quispamsis, and enjoying life at a different pace.
When friends mentioned throwing a farewell party, Dino smiled. âJust knowing people wanted toâthat alone is the celebration.â
His final message is one of deep appreciation.
âThank you for your loyalty, your friendship, and your support. Please keep supporting Cody at Amici and the new team at Red Brick. Youâve all given me more than I could have hoped for, and I will always be grateful.â
