Well that’s it. We locked the doors to the bistro for the very last time. In this final goodbye, I (Dani) would like to take the time to thank Pete.
When I approached Pete with the crazy idea of buying Dani’s Bistro, he was hesitant. What I saw was a sign that things were meant to be; A bistro with my name, downtown my favourite place to wander and a talented culinary husband. We knew this would have to be Pete’s baby and after long talks and lots of dreaming, he was on board.
In the last 7 years we have added another baby to our family, watched the building of the Performing Arts Center, seen road closures that brought business to a stand still, lived and worked through numerous covid lockdowns.
We have also seen familiar faces pull us through, served meals for weddings, showers and communions, discovered friendships and built relationships.
And through it all, I witness the growing of a man. I watched you, Pete, as you worked 12+ hours a day. I watched as you became the boss, something you never thought you would do. I watched you do the fun stuff, but I also saw you do the hard stuff that comes with owning a business. I watched as you came out your quiet shell and walked the dining room to check on dinners, making small chat and a difference. I watched as you not only would run the kitchen, but take on the serving role too. I watched you come home exhausted, scoop up sleeping babies for cuddles, to do it all over again the next day.
I am so proud of you. I love you. Thanks for taking my crazy dream, believing in me and making the best of it. It may have been Dani’s Bistro, but it was always Pete’s Magic. Now time to rest. You’ve earned it ❤️
