🍷 BACK OF HOUSE — WE’RE STILL LOOKING!

You certainly answered our call for résumés last time we posted — our inbox has been flooded, and we’re incredibly grateful for the interest in joining The Bottle Poet.

Now we’d love to see a few more Back of House applications come our way.

We’re looking for Line Cooks and Kitchen Support, and for the right person, there may be an opportunity for a full-time position.

🍷 Every great story begins somewhere. This one begins behind our doors.

For months, you’ve followed the whispers. You’ve watched our story unfold, one little detail at a time.

And today, we’re turning the page just enough to let you peek inside. ✨

Welcome to The Bottle Poet.

A little corner of Rothesay where w**es have stories, conversations linger, and every detail has been thoughtfully chosen to create something a little different.

The finishing touches are nearly complete. Just a few final administrative chapters remain before we can officially open our doors.

And while we can’t share our opening date just yet, we couldn’t wait any longer to share a glimpse of the space we’ve been creating for you.

Because soon, these empty chairs will hold conversations. These glasses will be filled. And the stories we’ve been waiting to tell will finally have an audience.

🍷 Just one more chapter before we can begin our story…

We’ve been overwhelmed by the excitement, messages and questions about when The Bottle Poet will open its doors. Thank you. Truly. 🖤

The w**es have been chosen.
The pairings have been developed.
The glasses are waiting.

And the Poet has been very busy in the kitchen…

A little glimpse of what’s been happening behind the scenes: coconut milk, pineapple and mango gelatos, ginger snaps and the Poet’s Coral.

Because w**e may be the beginning of our story, but what we place beside your glass is part of how we tell it.

We are currently awaiting final approval of our liquor licence, and as soon as we have it, we’ll be able to share the news everyone keeps asking us for:

Opening day. 🍷

Until then, keep watching. We have a few more things to show you.

We can’t wait to welcome you into The Bottle Poet, share the w**es we’ve discovered, and give Rothesay a new place to gather, taste and explore.

🍷 While we wait for our liquor licence, the Poet is exploring in the kitchen…

Testing. Tasting. Pairing. And figuring out exactly what belongs beside the w**es we can’t wait to pour for you.

Because at The Bottle Poet, the w**e comes first. The plate follows.

Meet The Poet’s Coral 🌿🪸

A fresh garden salad with crisp greens, colourful vegetables and strawberry vinaigrette, finished with a delicate edible coral lace and a scattering of petals.

The Poet is pairing this one with Clairette or Pinot Grigio — two bright, refreshing w**es that play beautifully with a fresh, acidic salad.

Never heard of Clairette? Perfect. That’s part of the fun.

Clairette is typically light and fresh, with delicate fruit and citrus notes. Pinot Grigio may be a little more familiar — crisp, refreshing and wonderfully easy to drink.

🍷 A little pairing lesson from the Poet:
The acidity in a vinaigrette can actually make the w**e taste softer and bring its fruit forward. The food isn’t meant to steal the show — it’s there to help you discover something new in your glass.

You don’t need to know the difference between Clairette and Pinot Grigio when you walk through our doors.

You just need to be curious about w**e.

🍷 NOW HIRING | JOIN OUR STORY

The Bottle Poet is getting closer to opening our doors, and now we’re looking for the people who will help bring it all to life.

We’re building our Front of House and Back of House teams, and while experience is certainly an asset, we’re looking for more than what’s written on a résumé.

We’re looking for great personalities, genuine hospitality, reliability, and people who are excited to learn. You don’t need to be a w**e expert, but you should have a passion for discovering w**e, learning about what’s in the glass, and creating an experience our guests will want to come back for.

✨ What we’re looking for:

👉 Great personality and a positive, professional attitude
👉 Passion and willingness to learn about w**e
👉 Must be available to work evenings and weekends
👉 Restaurant/hospitality experience is an asset
👉 Responsible Beverage Certificate of Completion is an asset
👉 Food Handler Certificate is an asset

🍾 IT’S OFFICIAL — WE’VE BEEN APPROVED! 🥂

Today marks a pretty big chapter in The Bottle Poet story…

The Town of Rothesay has officially approved The Bottle Poet W**e Bar. ✨🍷

What started as an idea, a few sketches, and probably more than a few bottles of w**e is getting very, very real.

A huge thank you to the Town of Rothesay and the Planning Advisory Committee (PAC) for their time, consideration, and support as we bring something new to our little corner of Rothesay. ❤️

There’s still work happening behind these windows — walls to finish, bottles to choose, menus to perfect and plenty of details still being written…

But tonight?

We’re raising a glass. 🥂

Because we are officially ONE BIG STEP CLOSER to welcoming you through the doors at 1 Gondola Point Rd.

And we cannot wait.

W**e is bottled poetry.
