Legend has it that the very first smash burger was an absolute accident born directly from the chaos of the Paris Fair. Years ago, our kitchen staff was attempting to grill regular, polite, thick burgers. Without warning, the infamous demolition derby of 1999 that couldn't be contained by the fairgrounds took off throughout town and the results were catastrophic! Cars ended up in the Grand River, and a few drove into Barker's Bush never to be seen again.
But what happened at The Paris Pub (at the time it was still the Europa) was truly insane and magical. A rogue 1993 Ford Ta**us participating in the demolition derby ended up coming right through the wall in our kitchen and landed directly on our grill.
We all assumed our Saturday dinner service was completely ruined. But when the dust settled and the engine block was carefully removed, we discovered the beef had been flattened into a crispy, caramelized masterpiece.
We cannot drop a sedan on your lunch anymore due to obvious zoning laws, but we have spent years perfecting the exact same technique using very heavy spatulas. Taste the result of this historical accident today.
