Six tins, an incredible lunch, and plenty of stories behind every bite. Angela and I recently joined Rasmus Larsen from FANGST and Daniel Vega from Ramón Peña for a virtual tasting, with each guiding us through a selection from their collection.
We started with FANGST’s Nordic sardines smoked with heather and chamomile, herring with white pepper and ramson, and trout with juniper and lemon thyme. Rasmus shared the stories of the Nordic waters their seafood comes from and why they choose cold-pressed rapeseed oil. The chamomile and clean, bright flavour of that oil had us hooked from the first bite.

Then came Ramón Peña’s sardines in sauce, mussels in pickled sauce, and squid stuffed with their own tentacles in squid ink sauce—so sweet and tender it reminded us of lobster. Hearing Daniel tell us about Anna making the sardine sauce in the kitchen gave us even more appreciation for the people and care behind these tins. Thank you, Rasmus and Daniel, for such a delicious afternoon and for sharing your stories.
