From May to October, we invite a spectacular lineup of rotating chefs to take over the kitchen for our Supper in the Orchard series. On June 18th, we are thrilled to feature our next hosted chef, who is bringing an incredible, fine-dining interpretation of Sri Lankan heritage and modern technique right to the valley, Chef Chaminda Ambagaspitiye, Founder, Culinary Safari- Savor Sri Lanka
Get ready for an unforgettable 4-course culinary journey under the prairie sky:
Course One: Sri Lankan Street “Kola Kenda” Velouté
A refined twist on Sri Lanka’s traditional healing street porridge, reimagined as a silky green herb velouté with a coconut emulsion and a crispy papadum tuile.
Course Two: Ceylon Tea-Smoked Chicken & Bacon Roulade
Free-range chicken and smoked bacon delicately infused with Ceylon black tea smoke, served alongside golden turmeric fondant potatoes, caramelized onion jus, and a warm coconut glaze.
Course Three: Black Pork Curry (Kalu Pork Kari)
A signature village-style black pork curry, slow-braised until deeply caramelized with roasted cinnamon, clove, and peppercorn. Served over aromatic coconut rice with bright pickled red onions.
Course Four: Coconut Cream Brûlée
The grand finale. A tropical, dairy-free reinterpretation of the French classic, made with silky Sri Lankan coconut cream and finished with a roasted cinnamon sugar crust and toasted coconut.
