Doctor’s orders: one Pink Pony Club, taken by the window with a view of the prettiest blooms in town.

Our newest feature pours pretty in pink and drinks even better. Dillon’s Strawberry Gin, made with real macerated strawberries, mixed with Campari, fresh lemon, house strawberry syrup, and a silky egg white finish. Tart, bright, a little bittersweet, and tastes like summer before it even arrives.

Hard sear on the scallops. Sweet carrot + parsnip underneath. Basil pesto cutting through. Blood orange + red wine reduction bringing the acid. Pancetta for the salt. Beet chips for crunch. Pickled ground cherries tying the whole thing together.
