The Channel

The Channel A wine bar rooted in a town that has always known how to navigate between the intimate and the expansive, the local and the global, the rugged and the refined.

The Channel is where Liverpool gathers, not to be impressed, to be delighted.

You know that feeling when a Saturday morning moves slow with coffee in hand, nowhere to be, the kind of quiet that deserves something a little more interesting than your own kitchen?

Or a Friday that finally wound down with the week behind you, a glass in front of you, and just enough evening left to exhale properly?

We built this place for those moments.
And starting June 1st, we're making more room for them.

Monday Β· 11am – 10pm
Thursday Β· 11am – 11pm
Friday Β· 11am – 11pm
Saturday Β· 9am – 11pm
Sunday Β· 9am – 10pm

Weekend mornings starting at 9.
Friday and Thursday nights going until 11. More hours, more of what brought you here in the first place, good wine, a real conversation, a room that doesn't rush you.

The current is always moving.
Come find yours. 🌊

The kind of day that makes you want to stay inside.

Cool air out there, warm light in here and this afternoon, we've got a reason to linger.

Vernon Oickle is joining us at 1pm to sign copies of Eleven Crows for Good Health, and we'd love for you to come in, say hello, and take one home.

While you're here: breakfast sandwiches and paninis are on, along with mimosas, Caesars, and coffees with a little something extra.

Come find your current. 🌊

If I was having dinner at The Channel tonight, here's exactly what I'd order.

I'd focus on the scallop and chorizo gratin and I'd add the Mediterranean potato salad on the side without thinking twice. That combination is doing something.

And then tonight's feature would be non-negotiable: poached pear with Saint Azur blue cheese, arugula, walnuts, and a white wine vinegar dressing. We made more of it tonight because I couldn't stop thinking about it after tasting it yesterday.

Some things just stay with you.

Some things just belong together.

Crisp pear.
Peppery arugula.
Creamy St. Azur blue.
Toasted walnuts.
A bright white wine vinaigrette that ties it all together without trying too hard.

This salad isn't asking for your attention,
it already has it.

On the menu tonight, Thursday.

There's something happening on our walls.
Andre has been quietly at work and something has shifted.

Many of his pieces have made way for new work, and this collection has a presence all its own.

Crows.
Ebony, intelligent, and layered with meaning, exactly the kind of imagery that feels right at home beside a glass of something worth savouring.

The timing is intentional.
This Saturday at 1pm, The Channel welcomes Vernon Oickle for a book signing and reading and Andre's crow collection is the perfect backdrop.

If you're a fan of Vernon's work, we suspect these paintings will stop you in your tracks.

They should.
They're that good.

Each piece is available for $250 and can go home with you the same day.

Art that carries a story, displayed in a space built for them and now connected to an afternoon you won't forget.

Come for the reading.
Stay for the wine.
Leave with something for your wall that will make people ask questions.

πŸ“… Saturday | 1:00 PM

Reserve your seat for lunch or simply show up.
Either way, we'll have a glass waiting.

Thursday Tide | The Channel Wine Bar

Sangria gets all the postcards.

But ask a local in Spain what they're actually drinking on a warm afternoon, and the answer is almost always Tinto de Verano, which translates, simply, to summer wine.

No fruit to muddle. No overnight steep.
Wine, a splash of lemon soda, ice, and the unhurried belief that some of the best things don't require much fuss at all.

Lighter than Sangria.
Bubblier.
Something you drink without thinking too hard about it, which, if you ask us, is exactly the point.

This Thursday, we're pouring it three ways: red, white and rosΓ©, alongside a little chorizo, because the Spanish figured out a long time ago that those two belong together.

Thursday Tide | $8 a glass. Your call on the colour.

Some things are worth saying out loud.

We are proud members of Nova Scotia Loyal and while not every item on our menu carries that badge, every choice we make does.

The wines we pour.
The ingredients behind our small plates.
The products lining our shelves.
We choose with intention, asking where does this come from, and does it belong here?

More often than not, the answer is yes and it's Nova Scotian.

And speaking of our shelves something is coming.
Our retail section is growing, and we've been thoughtful about every addition. Stay tuned. You don't want to miss this. πŸ‘€

When you walk through our door, you're not just visiting a wine bar. You're supporting a vision of what it looks like to do business on this shore with care, with community, and with a little bit of pride.
