🌟Meet our Sous-Chef, Dimitri🌟
Dimitri was born & raised in Vittorio Veneto - a town in the prosecco region not too far from Venice & the Dolomites. At 5 years old Dimitri started cooking, or ‘helping’ to cook, with his Mum at home.
If you’ve eaten with us recently, you’ll see some new menu items that Dimitri has brought to the restaurant from home. The ‘Le Classiche’, ‘Olivata’ & ‘Sbrisolona’ are Dimitris’ classic dishes that add a lil Vittorio Veneto sparkle to our menu, & you best believe they’re delicious!

Dimitri moved to Canada in June 2025, and joined the Bramasole family that November. Being a winter man, Dimitri was drawn to Fernie for the snow & mountain living, but (in classic Fernie style), he has stayed for summer! & now, Fernie is proving that you can enjoy summer just as much as winter!

Being our resident Italian stallion here at Brama, Dimitri also takes on the role of dialect coach (as much as he hates it). It’s tiring for Dimitri to have the whole staff repeating menu items at him until we get the ‘yes, okaaay’ - confirming that we have just about used the right pronunciation. Dimitri then has to listen to us return to our tables, full of confidence, & completely butcher the pronunciation 🫠🫠
I asked Dimitri about his relationship to food, and he says ‘well, I can’t stop snacking, so not good - but I guess that’s not good to say. So, let’s say: I love experimenting with new flavours!’
