🍊 Final Dos Jefes Cask. This One Is Ridiculously Good 🍺

We’re tapping a fresh cask today and this one is something special. It’s Dos Jefes – Grapefruit Vanilla IPA (7% ABV), conditioned in cask and dry hopped with El Dorado and Mosaic.

El Dorado brings waves of tropical fruit, pear, watermelon candy, and juicy citrus, while Mosaic layers in mango, grapefruit, blueberry, and soft pine. Together with the grapefruit and vanilla base of Dos Jefes, it creates an insanely aromatic pint that somehow stays balanced while absolutely exploding with flavour.

And honestly? This cask is drinking unbelievably well right now. Soft natural carbonation, silky texture, bright citrus, smooth vanilla, and huge hop aroma all working together perfectly.

This is also the last Dos Jefes for the foreseeable future, so if you’ve been waiting to have one more pint, now’s your shot.

As always, this one is poured from our genuine hand-pumped beer engine, and it’s one of the only true cask beers you’ll find in the valley. We only have one cask, and it definitely won’t last more than 24 hours.

Seriously. If you’ve been seeing the posts every other week and saying “we should check that out sometime”… this is sometime.

Taco Night is back this Thursday, May 28.

And if the weather finally decides to cooperate, we might just end up with a patio full of tacos, cold pints, and people realizing Thursday is actually the best night of the week.

🌾 Cask On Today: Down by the River. Local Malt, Local Hops, Loaded with Aroma 🍺

We’re tapping a fresh cask today and this one is absolutely packed with hop character. This is Down by the River – American Wheat Ale (5.3%), conditioned in cask and dry hopped with Mosaic, Elani, and Krush hops.

Mosaic brings its classic layers of mango, citrus, blueberry, and soft pine. Elani adds juicy tropical fruit, guava, citrus, and delicate floral notes, while Krush pushes things even further with bright peach, mango, berry, and punchy tropical aromatics.

The result is a cask bursting with aroma and flavour while still staying incredibly smooth and easy-drinking. The soft wheat body lets all those hop layers shine without ever feeling heavy.

And as always with Down by the River, we’re proud to brew it using from Mississippi Mills, just down the road, along with some hops grown nearby as well. Local ingredients, local beer, and one of the freshest ways you can drink it.

This one is poured from our genuine hand-pumped beer engine, and it’s one of the only true cask beers you’ll find in the valley. We only have one cask and they rarely last more than 24 hours.

Carleton Place's Most Unique Game Night Is Back

And we’ve only got a couple of tables left for this Thursday.

Pints Against Humanity is our monthly style night at Stalwart Brewing where you show up with a team, submit terrible answers anonymously, and spend the night laughing harder than you probably should.

It’s part game night, part night out, and somehow always turns into one of the funniest nights of the month.

Thursday, May 21 | 6:30pm–8:45pm-ish
$25 per person includes:
• A pint of anything on tap
• Snacks - including savoury hand pies from
• Entry into the game
• Prizes for the top 3 teams

Teams of 2–4.

Bring someone who’s never been before and your whole table gets 20% off.

We only run this once a month and the remaining tables won’t last long.

💊 Cask On Today: Dr. Feelgood + Pink Hop Extract 🍺

We’re tapping a fresh cask today and this one is something a little different. This is Dr. Feelgood – IPA (6.8%), conditioned in cask and boosted with Pink hop extract.

Despite the name, Pink is not a colour or gimmick hop. It’s a modern hop-derived extract designed to deliver huge aromatic impact, leaning heavily into bright tropical fruit, citrus, peach, and juicy candy-like notes with an intensely expressive aroma.

Layered over the classic Dr. Feelgood base, it creates a seriously aromatic pint that still keeps the firm IPA backbone intact. Big hop character, smooth bitterness, and waves of tropical citrus on the nose and finish.

On cask, it drinks beautifully. Soft natural carbonation, silky texture, and a rounded body that lets all those aromatics absolutely explode out of the glass.

As always, this one is poured from our genuine hand-pumped beer engine, and it’s one of the only true cask beers you’ll find in the valley. We only have one cask and they rarely last more than 24 hours.
