Next stop: Palestine, through a rich and aromatic cocktail inspired by warmth, spices, and traditional ingredients.

This cocktail is dedicated to Palestinian flavors, where grain, spice, and fruit are part of everyday cooking.
Blanche de Drouin infused with roasted freekeh brings a dry, toasted grain note and a subtle smoky depth. Freekeh is a young green wheat, harvested early and roasted over fire, commonly used in Palestinian cuisine in soups, salads, and warm dishes for its earthy and nutty character.
Fino sherry adds lightness and a touch of salinity.
The coffee, cardamom, and pomegranate syrup brings bitterness, spice, and fruit, echoing the warmth and intensity of the cuisine.
The glass is rinsed with arak, adding a delicate anise note on the finish.
