Hummm Lambic schooling...

The Lambic Academy is an educational initiative by HORAL that offers skilled support to anyone who is engaged in lambic beers at a professional level. This training course is primarily geared towards pub and restaurant owners and their staff.

A few weeks back Cantillon filled their very first vat with lambic to transport to their new fermentation location. The next day was a brew fully for the new location. After arrival, the lambic will be transferred into barrels that already have contained lambic from Cantillon in the past in an effort to keep the same live cultures in the fermentation active on the new location.

Looking forward to next week, Brasserie Cantillon is hosting the spring Public Brew Day on Saturday the 14th of March. I will be giving tours. Hope to see you there!
