Our beloved Mystic NEIPA has landed in 12th position for the hottest 100 NEW RELEASE BEERS FOR 2022 and 143 in the overall hottest 200.
Along with that, the Huck Hazy landed at 35 and the Daydream XPA at 51.
We canā€™t thank everyone enough for your votes. It just continues to be such a magical and memorable first year for all the team.

On Tap!! Yes we still have some of our 4% Pilsner On Tap at two venues in the Illawarra. Red Square, cool little bar in Wollongong CBD; and the German Club near Kembla Grange ( next to the mega Bunnings on the south side of Unanderra).
Other than that Mick is still enjoying his semi-retirement. The venue in Unanderra has been run by Jeff Argent and crew as Seeker Brewing for over 6 months. Check out Seeker!! Wood Fired šŸ• Pizza, awesome renovation & great atmosphere.

Featured Beer from Bulli Brewing Company - Pauline Red IPA

Please explain ! Not as red as a red wine, but in beer terms this is a red ale. Well hopped but not quite enough alcohol to make it an IPA, Pauline sits between a few typical descriptive beer categories.

While itā€™s not a heavy beer, this is a full flavoured ale. Slightly malty with hints of toffee, burnt fig and caramel to balance the hops. Pauline is not a sweet ale, as we have been generous with the hops, adding them at various stages in the kettle as well as dry-hopping in the fermenter. Hop bitterness and some fruity notes come through.

ABV 6.0%, IBU 45-55

Malt ā€“ Ale, Shepherds, Aurora, Light Crystal, Medium Crystal, Munich, Wheat

Hops ā€“ Super Pride of Ringwood, Ella, Enigma, Tomohawk

About Us

Picture a man who is part mad scientist (picture a bald version of Doc from Back To The Future) and inspired by mad celebrity chefs like Heston, our Head Brewer cannot stop tweaking his beer recipes. Part mid-life crisis moment, part bored with life and a bit of spare time on his hands, Mick decided that he would look at getting into the craft beer industry. Not in a small way, but opening his own brewery.

Years of home brewing and a constant curiosity to change alter and test different ingredients. His dad was a home brewer and tried to brew beer that his two sons wouldnā€™t drink. Dad lost and the boys learned to like hoppy beers and dark ales when most others were enjoying tasteless commercial swill.

Initial research was attending some of the early craft beer conferences in Australia in 2014 and 2015 and of course visiting breweries and pestering craft brewers with countless questions. Naive to the industry, Mick had more questions than a four-year old. A four-day course covering the basic science, cleaning, chemicals, etc of small scale commercial brewing, where the fourth day was putting a batch down in a small brewery was a huge learning curve.

Research on equipment and property for location was a major task. A few ideal sites fell through and Mick ended up buying a small factory in Unanderra on the south side of Wollongong, about a fifteen to twenty minute drive from home in beautiful Bulli. Lets face it Unanderra does not rhyme with much and he was already keen on Bulli as the brand name.
