Cellar Door from noon today.

Cheese from , . Dry cured ham from . Ferments and preserves by . Crusty bread baked this morn by Hila and butter from . We’re so lucky to share such deliciousness of our close surrounds alongside our wine.

This will be our last session before Christmas and a great opportunity to grab a bottle or two or gift card that never expires.

Thanks to everyone who joined us this year! It was heaps of fun. Surreal to see this little spot turn into a wine cave in our tiny town. Bustle, sunshine, slurpy things, chilled times and tunes. We appreciate every single one of you who came through our door.

These spring wines have well and truly been released to some of our favourite venues in VIC, NSW and now Western Australia . 🥰

A mineral and salty Farmer’s Fizz, a delicately skinsy Fiano and a sparkling Lambrusco Rosé. As always, small lots of each made with much focus and manual effort.

Vintage 2025 was hot, dry and compressed. We closely followed maturity to balance refreshing acid with phenolic ripeness. These wines reflect the electricity of what v25 was and thankfully a few timely picking decisions.

The last bottles of Lambrusco are up on the website now in 3 mixed packs. Good snag for someone special or yourself or the summertime.

A sincere thanks to our mailing list, cellar door and market visitors and to all venues who scooped this release. We are grateful for your support over the years. We cannot do what we do without you. X

Guards on the ground means vines to the wire.

Pruning is done on our home block. The prospect of our first harvest in 2026 is wild. We began our vineyard with little more than 500 cuttings propagated by us, Chardonnay clones (Mendoza, Penfolds 58) and Pinot Noir (MV6 , 114, Abel) planted on the upper level of our clay and limestone Escarpement. The diversity of clones, continuity of own rooted vines and dense planting will hopefully allow us to capture the varietal character of Chardonnay and Pinot Noir as purely as possible relative to this site!

We’re finding the silver lining in the patience an independent project like this requires by looking at where it began; an empty escarpment with no power. We now see revegetated natives standing well above us and up to 1000 vines that have reached the cordon. We have power! And many happy ducks and chicks.

We’re serving warm bowls of goulash every Sat and Sunday over winter. The dish reminds me of my Mum’s side of the family who were given it as kids to keep “meat on their bones.”

Thanks to a couple old family cookbooks that came our way from and many tips, our take is made using local grass fed beef from or , organic produce from , a dallop of Schulz quark and daily baked bread from Hila’s kitchen. Seriously, we’re just making things we enjoying eating and we hope you do as well.

Adrien is also a super talented and self trained artist painting nostalgic still life of Melbourne and now Timboon surrounds. A collection of his art is up at the cellar door. Come check it out and warm up.

A few good words.

Thank you to all the venues, our mailing list and beyond for supporting this release.

‘24 Pinot Noir
‘24 Grenache
‘24 Sangiovese

Pinot Noir was the first variety we made under Babche in 2019. We were excited to welcome its familiarity back into the winery last year. Planted and grown by Roger Blake in Dean’s Marsh. It’s plush with a gentle savouriness developing as it matures. The last 12 bottles are up on the website now. This one slipped through our fingers. Hope you can snag a bottle and enjoy it with someone special.

‘24 Babche Grenache is often the first to kick off the red picks. Always a ponder and contemplation in the vineyard. It is delicate and floral grown on heavy quartz. Old vines and certified organic. Such a privilege to work and learn from this fruit.

Lastly, our take on Shay’s Flat Sangiovese from the Pyrenees. This vineyard is special. It gifts layers, texture, salinity and depth when picked well. Balanced and always taking us to a place of vintages abroad, travel and freedom.

Few snaps from harvest. Hot, dry, delicious. Photography by .vignau who spent a couple days with us in the heat and gruel. We are forever grateful.

In our experience, it is normally all said and done by Easter. This year was notably compressed and kicked off early. Chardonnay for our Farmer’s Fizz was off by the end of January and our last portion of fruit, Otway Pinot Noir was pressed by the end of March. The picks aligned this year (!!) balancing freshness with ripeness. A wise old game.
