A day in Tuscany… via Ascot. 🍷

Yesterday we swapped aprons for notebooks and joined fellow wine lovers at Coworth Park for a tasting hosted by Chiara Borchi from Le Mortelle, one of the Antinori family’s coastal Tuscan estates.

From the fresh and vibrant Vivia Vermentino to the elegant Botrosecco, the impressive Poggio alle Nane and the beautifully mature Ampio 2019, it was a fascinating journey through the vineyards of Maremma.

Days like these are a reminder that great hospitality never stops learning. The more we discover, the more we can share with our guests.

We’re delighted to share that Shambles has been featured as an Editor’s Pick in the June edition of Decanter Magazine, one of the world’s most respected wine publications.

The article highlights our wine programme and the role Coravin plays in allowing us to offer over 40 wines by the glass, giving guests the opportunity to explore and discover wines they might never otherwise encounter.

For a family-run independent restaurant & winebar in Teddington, receiving recognition from a publication of Decanter’s standing is something we’re incredibly proud of.

Following the wonderful Garden Summer party we recently hosted with , we wanted to highlight one of our favourite ‘go to’ food and wine pairings for the Summer.

Wood-fired yellowfin tuna steak (sourced from ) with Virgin sauce.

A dish that captures everything we love about summer cooking - exceptional ingredients, treated simply.

The gentle smokiness from the wood fire pairs beautifully with sweet tomatoes, capers, extra virgin olive oil and fresh herbs, allowing the quality of the tuna to take centre stage.

🍾 Wine pairing: Ferrari Trento Brut, Blanc de Blancs

Fresh, elegant and beautifully balanced, the fine bubbles and bright acidity of Ferrari Trento cut through the richness of the tuna while complementing the freshness of the salsa vergine. A pairing that reminds us why Ferrari remains one of Italy’s finest sparkling wines.

Yesterday’s workstation: a 40kg wheel of Grana Padano Parmesan and a box of summer truffles. Not complaining. 😎🇮🇹

We swapped the restaurant for a home garden and brought a little bit of Italy to a milestone birthday celebration. ☀️

One of the highlights was our Parmesan wheel risotto, finished inside a 40kg wheel of Grana Padano and shaved generously with summer truffle from .

Alongside it, guests enjoyed mixed grill skewers of Tuscan sausage, fillet steak and chicken fresh from the grill, together with a selection of seasonal salads and antipasti.

A huge thank you to our hosts for looking after us so well and trusting us with such a special occasion.

Yesterday Massimo had the privilege of visiting Downing Street as a guest of Small Business Britain.

As the winner of a 2025 Small Award - Best Family Business UK, it was an honour to join fellow entrepreneurs from across the country to celebrate the contribution that small businesses make to our communities, high streets and local economies.

The visit included the opportunity to meet Chancellor Rachel Reeves inside No.11 Downing Street. As an independent restaurant owner, I was proud to represent both Shambles and the wider hospitality sector.

Hospitality is one of the UK’s largest employers and sits at the heart of our towns and communities. Yet many businesses continue to face significant challenges from rising costs, increasing taxation and ongoing economic pressures.

One issue that continues to affect the entire sector is VAT.

The UK industry pays one of the highest VAT rates in Europe, which is why and many businesses are supporting the campaign, calling for hospitality VAT to be reduced from 20% to 10%.

A lower rate would help protect jobs, encourage investment and make eating, drinking and staying out more affordable for everyone.

From revision notes to tasting notes. Good luck Maria & Melania. 🍷

Over the last month, Maria and Melania have been studying hard for their WSET Level 2 Award in Wines, building their understanding of grape varieties, wine regions, tasting techniques and food pairing.

After weeks of revision, flash cards, practice tastings and plenty of homework, they’ve spent the last three days in London Bridge completing their course and examinations.

We’re incredibly proud of the dedication they’ve shown alongside their day-to-day roles at Shambles.

As a restaurant with over 40 wines available by the glass and a wine list devoted to discovery, continual learning and curiosity is a big part of what we do. The more our team learns, the better experience we can offer our guests.

A huge thank you to and for hosting excellent training sessions here at the restaurant before the course, helping our team prepare for the challenge ahead.

Now comes the hardest part… waiting for the results. 🤞🍷

BBQ scallops in their shell, N’duja and pangrattato.

Paired with the Biodynamic, La Rosé from .wine, a beautifully textured rosé from Alto Adige. Its vibrant acidity, wild berry character and subtle savoury notes make it the ideal partner for the sweetness of the scallops and the gentle smoky heat of the N’duja.

Not all seafood needs white wine.

🦆 A duck, a lifeboat crew and a future Prime Minister? Stranger things have happened in Teddington.

Our Italian duck had a fantastic day at the Teddington Duck Race, even if it didn’t quite make it onto the winners’ podium in the water. We were absolutely delighted to finish 2nd place in the Best Dressed Duck competition from 66 entries, complete with garlic garland, chef’s colander hat and (at the start of the day at least) a farfalle pasta bow tie. 🇮🇹🍝

The duck even found time to pose for a photograph with Liberal Democrat leader sir before heading off for its aquatic adventure.

A huge thank you to , the volunteers, everyone who voted for us, and all the local businesses who took part.

We’ll be back next year. The bow tie will be stitched on more securely.
