Pork cotoletta is on the menu and it is not messing around.

400g of pork cutlet, moisture infused so it stays soft, juicy and full of flavour, then finished with a sage crumb for that golden crunch.

Crisp on the outside.
Melt in the mouth in the middle.
Exactly the kind of dish that makes you go quiet for the first few bites.

That’s not popcorn chicken.

This is popcorn crocodile.

Yes, really.

Dion has put popcorn crocodile on the new winter menu, served with lemon myrtle, samphire and coconut labneh.

It is crisp, fresh, a little unexpected, and very much one of those dishes that gets ordered with a “go on then” and ends with everyone at the table trying to steal the last piece.

Little known fact: We make cakes, too.

This one is made with layers of soft sponge, fresh cream and berry compote, then finished with all the pretty bits.

Not your sad supermarket birthday cake. Not the “quick, grab something on the way” cake.

The kind of cake that belongs in the middle of the table, with a few glasses of wine, too many forks and someone absolutely claiming they’ll “only have a small piece”.

Thor’s Hammer has landed at 1918.

Sadly, not the Chris Hemsworth version.

But honestly, a slow braised 2KG beef shank by the fire with Barossa wine is not a bad consolation prize.

Rich, tender, served with soft polenta and roasted seasonal vegetables, and made to serve a minimum of four.

Bring people.

Soft, pillowy little things that sit in the sauce like they know exactly where they belong.

On the new winter menu, Dion has paired them with slow braised lamb ragout, cooked down until the sauce is rich, deep and full of flavour.

It has that old-school comfort food feeling.

The kind that takes you back a bit. Childhood dinners. Warm kitchens. The smell of something bubbling away long before anyone was called to the table.

There is something very nice about food that does not need to perform tricks to be good.

No tiny dots of sauce for the sake of it.
No foam that makes everyone at the table politely pretend they understand what is happening.

Just proper winter comfort food, done with care.

That is what Dion has been bringing into the new 1918 menu.
