Savoury chickpea flour and coriander fritters from Maharashtra, served with house-made carrot chutney. A snack that barely exists on Sydney menus and absolutely should.

Adwait’s version is crispy, fragrant and gone faster than you’d expect.

Adwait’s new one. Charred cabbage, celeriac salan. Vegan, and genuinely one of the most interesting things on the menu right now.

Salan is a dish from Hyderabad, Telengana.
Slow-cooked, deeply spiced, peanut and sesame base. We’ve paired it with charred cabbage and it just works.

We’ve had this on the menu since the very first night.

Champaran Mutton. A dish from Bihar that almost never shows up in Sydney. Bone-in goat from slow-cooked for hours in spiced oil until it does whatever it wants.
