Five years can seem fleeting after it’s been lived and it almost feels like an injustice to how much hard work, stress, money, time, commitment, preference, tears and love was poured into what became our heart and soul. The first few years were tough, so very tough but we pushed through, working jobs on the side to make ends meet as we toiled through back-to-back double shifts. It was hubris to think we would fall into something in the industry we all knew that would be an instant success - we were so confident and young and positive. It only takes a few weeks of no customers at all to really wake you up.
We persevered! We faced criticism and people telling us we couldn’t...but we did. We created something that so many people have loved. We were reviewed and rated by everyone that came through our doors (who took the time to) be it good or bad and we came out on top. We will forever be grateful to every single person that visited and supported us. You all made it possible to for us to be there and we can’t thank you enough! We want to thank the niche members of the Potts Point and surrounding community that came in multiple times a week to remind us why we were battering ourselves. We want to thank our close friends who knew we were having a rough patch and came in night after night to keep us going. We want to thank our supportive partners who stuck with us as we worked mornings, days and nights who always felt second best but were the batteries that powered our tired bodies.
Most importantly we want to thank Elizabeth and Lambert van der Heide who made Parsons possible and kept it alive when it struggled.
Last but not least; the amazing team that’s worked there for 5 years. Starting with our fabulous branding courtesy of Matty Player; wine and beverage master / waiter Martin Stalley; our list of faithful floor and media staff: Eliza, Gabby, Ellie, Juliet, Scarlett, Kai, Sophie, Amy, Issi, Amy2, Sadbh, Justin, Gandhrav, Jack, Marty and Eric.
