Straight from the reef to our kitchen. Incredible wild-caught fish from chris bolton, whose passion, knowledge and respect for the ocean are reflected in every catch. A privilege to work with produce like this.

We’re incredibly proud to have retained Two Hats for 25 consecutive years.

Congratulations to our co-head chefs Antonio Colonna and Brittany Smith, and to the whole Icebergs team, past and present.

It takes a lot of people and a lot of heart to keep a dining room at this level for a quarter of a century, and we’re thankful for everyone who has shared a table with us along the way.

Our own Aarush “Baba” Rijal was one of ten finalists at the S.Pellegrino Young Chef Academy Pacific Final this week.

His dish, Charred Wild Boar Neck, Fermented Pumpkin & Bitter Citrus, traces his path from Nepal to Bondi.
