Our Kaki Sour draws from that story, transforming its sweetness and symbolism into something layered, textural, and deeply expressive. A meeting of Nikka From The Barrel, Katsura Touge shochu, lacto-fermented persimmon, Yellow Chartreuse, and egg white.
