Hojicha x Whisky Highball w/ Black Sesame Foam 🫖 🥃 🫧

For International Tea Day I wanted to share this little number I whipped up. It’s a simple concept really, I love drinking whisky, I love drinking highballs, and if I’m not drinking either of those, I love drinking tea. It just makes sense to now mash them altogether to create something that combines the best of all worlds.

Hojicha is my preferred tea to drink if I feel like a whisky but am having a dry week, to me it shares many similar qualities to a good dram. I’ve taken a cold brew Hojicha tea and carbonated it to create a hojicha soda, mixed that with a touch of maple syrup, a split base of Nikka Days and Nikka Yoichi and topped it off with some black sesame foam.

A superb combination of flavours, expressed with simplicity.

Task failed successfully ✈️

A Paper Plane is the perfect example of a cocktail that doesn’t need syrup to be balanced with citrus. An equal parts cocktail that calls for bourbon, Aperol, Amaro Nonino and lemon juice. Opting for the Jack Daniels Bonded is the perfect way to give this drink just a little more bass, and lean into the richer, more caramel and oak forward characteristics.

What makes the perfect whisky drinking glass?

Usually an ideal glass will have a bulbous half at the bottom of the glass where the whisky can move around and breathe, while the top half tapers up and is a bit more narrow. This design brings out the best in your whisky, allowing a lot of flavours and aromas to open up and be precisely directed to your nose, and then delivered into a targeted area on your palate. Glasses like a Glencairn glass or a Copita glass are perfect examples!

💫 A Starward New Old Fashioned 💫

When the Beastie Boys released their 2nd record ‘Paul’s Boutique’ it leant a lot more into the art of sampling. Taking something old school or old fashioned, reproducing it with a little twist from the artist and crafting something new. Yet it still contains the recognisable DNA of the original track it sampled. I view cocktails in the same way, especially when it comes to whipping up a riff on such a staple classic, like the Old Fashioned.

My perspective on cocktails as a whole, but more specifically this drink, are inspired by music, by hip hop, and in this case, inspired by the Beastie Boys and Paul’s Boutique. Sampling the classic Old Fashioned, keeping the core DNA and backbone intact, but giving it a little artists twist and reproducing something new.

59 Chrystie St is a residential building in Chinatown, New York City. During the mid 80’s, the Beastie Boys resided at 59 Chrystie St as they truly completed their transition into the genre of hip hop. They treated it as a creative space, a rehearsal studio and just a good old hang out spot. The building shares a name with the 15th track (or more specifically track 14a) and shares a name with my Starward New Old-Fashioned cocktail.

Come and try my drink at .lounge while you’re surrounded by posters of the Beastie Boys and likely listening to some Beastie Boys bangers. It will be available until the end of May. The bar celebrates the golden age of hip hop and highlights everything beautiful about the art of the genre 🎧 🥃

Saturday Night Boilermakers 🍺 🥃

A style of beer I haven’t experienced before, made with oak-smoked wheat malt. It’s a polite hug of smoke, like burnt toast, but still super bright and refreshing. Crisp, dry and shiny, and pairs perfectly with the rich, dense, charred oak cask Lagavulin 💨

Not only does it amp up the underlying charred characteristics in the whisky, but also amps up some of the sweeter notes. A superb conversation between these two 🥃 🍺
