So today we got to do a big cook for one of our extended family who works for WA Fire Brigade for a function at their house for their work mates. Unfortunately I did not get photos of the finished cook but to give you an idea what you can cook in our 16 inch smoker, we have 3x1.5kg brisket and 3.5kg pork on the bottom rack and you still have the top rack to go

Unfortunately one of the wheels failed on the last smoker we delivered before we upgrade to the new type. Because we stand behind our products, we replaced all of the wheels with the new type that we are using on our smokers now. The customer will have no more problems with these heavy duty greaseable wheels.

For this cook up we have pork ribs, beef ribs and pork belly.
So from the first picture, a good amount of meat on the bench, we put some dry rubs on the ribs and cooked for about 5 1/2 hours, pork belly we turned into pork burnt ends.
