Varnish’s pays its respect to the nouveau dive bars of the States, but throws a sly nod to Perth’s own history with sepia-toned images of the neighbourhood’s yesteryear. Tucked in the basement of a heritage building right in the heart of Perth’s C*D, is Varnish on King - paying homage to American Wh***ey and home to Perth’s most extensive showcase of bourbons, ryes, Canadian and Tennessee wh***ey.

Our iconic bacon & wh***ey flight is a 'thing' for those in the know - and if you flip a gold coin in the heightened jar, you know what kinda cap we'll put on that. Our food is an innovative, eclectic fusion of American classics with an Aussie twist and our interior pays respect to the nouveau dive bars of the States - throwing a sly nod to Perth's own history with sepia-toned images of the neighbourhood’s yesteryear lining the walls.

For one night only, Amanda Aguilera, Charles Heidsieck Australian Brand Ambassador, joins us underground for an intimate journey through five exceptional Ch*****nes, sharing the stories, craftsmanship and distinctive house style behind every glass.

Alongside each pour, Chef Mari Hoff has created a cheese-led menu designed specifically to complement the Ch*****ne, bringing out its texture, complexity and character.

This is far more than Ch*****ne and a cheese board. It’s five carefully considered courses and an evening dedicated to the art of Ch*****ne and cheese pairing.
