Nothing beats the sound of woodfire crackling and the sight of a premium cut hitting the open flame.

We’re keeping things rugged but refined with this one, flame-grilled steak, perfectly sliced for the table, served with charred onions and a rich, glossy jus. It’s smoky, juicy, and built for sharing over a few drinks.

We didn't set out to reinvent the wheel with our Classic Gin, we set out to perfect it. By leaning into heavy juniper, coriander, and angelica root, and precisely fine-tuning the pH levels during the cut, we’ve created a gin with a distinctively silky mouthfeel and a pristine, clean finish.

It’s technical precision you can actually taste.

Pair it with our house-made mixer, “The Tonic”, to let those traditional botanicals truly breathe.

🚨 SATURDAY IS SOLD OUT | JUNE TICKETS FLYING

Wow, Shoalhaven. You didn't wait around, this Saturday night’s degustation is completely sold out!

Because the demand was so high, we are doing it all over again. The next exclusive degustation night is Saturday, 20th June.

If you missed out this time, this is your second chance to see the distillery floor completely transformed. Expect the lights down low, hyper-local Australian land and sea produce on the plates, and bespoke cocktails crafted entirely from spirits made in-house as Terry and Michelle return to their fine dining roots.
