When we first walked into this building, we could feel that it already had a story. Years of history, different lives, different people — all leaving something behind.

So when we created Joe Taylor, we never wanted to erase what was here before us. We wanted to respect it, keep its character, and add our own chapter.

The old bones stayed.
Then came the wine, the food, the music, the late nights and the people.

Because the best venues aren’t created from scratch.

They evolve.

This is our chapter of a place that has been telling stories for a very long time.

Tom Yum, but make it a Margarita.

Inspired by one of Thailand’s most iconic flavours — bright lime, chilli heat, fragrant lemongrass and that unmistakable Tom Yum kick. We took those flavours out of the bowl and put them into a glass.

Spicy, citrusy, aromatic and a little unexpected.

สำรับ — A Thai Feast

In Thailand, we rarely eat one dish alone. We eat สำรับ (Samrub) — a table made complete by many flavours, shared together.

A little spicy, a little sour, something rich, something fresh. A dip surrounded by seasonal vegetables, something crispy from the wok, something from the sea, and recipes carrying memories of home.

There is no strict order. No starter, main, then side. Everything arrives together, each dish balancing the next. You take a little from here, a little from there, always with rice in the middle.

That is the beauty of Samrub. It isn’t simply a set menu.

It’s the Thai way of gathering around a table — sharing food, stories, and a little bit of everything.

Lhon Tao Jiew — หลนเต้าเจี้ยว

Some Thai dishes aren’t made to impress. They’re made to make you feel at home.

หลนเต้าเจี้ยว is one of those dishes — an old-school Thai comfort food built around fermented soybeans slowly cooked with coconut cream until rich, savoury and gently sweet.

Traditionally, it sits in the middle of the table surrounded by fresh vegetables, ready for everyone to dip, share and eat together.

At Joe Taylor, we keep that feeling of home, serving our Lhon Tao Jiew with seasonal vegetables and fragrant turmeric rice.

Simple. Familiar. Very Thai.

We wanted our new cocktail list to feel a little like Thailand in a glass — familiar flavours, memories from home, but with a Joe Taylor twist.

Thai Tea Aperol Spritz takes the flavour of cha yen we grew up drinking and turns it into something bittersweet, bubbly and made for aperitivo hour.

Mango Sticky Rice is our love letter to one of Thailand’s most iconic desserts — ripe mango, creamy coconut and that rich, comforting sweetness, transformed into a cocktail.

And then there’s Tom Yum Margarita — inspired by the flavours that instantly make you think of Thailand. Lemongrass, kaffir lime, chilli, citrus… spicy, sour, aromatic and just a little dangerous.

The Heart Behind Our Cooking

These photos mean so much to us.

Mum came to Melbourne for a holiday, but as always, she couldn’t stay away from the kitchen. She spent time tasting, checking, and guiding us through the recipes that have been passed down through generations.

Every spoonful was tasted carefully. Every seasoning was questioned. Every detail mattered.

She is the inspiration behind what we do. The flavours at Joe Taylor aren’t created from cookbooks or trends — they come from a lifetime of home cooking, family gatherings, and recipes lovingly shared around the table.

Watching her stand beside the next generation, teaching, tasting, and making sure every dish stays true to its roots, reminds us why we started this journey in the first place.

Behind every plate is a story.

And behind our food is Mum.

Our Peek G*i Yud Sai takes the flavours of Northern Thailand’s iconic Sai Ua and stuffs them into a boneless chicken wing before it’s grilled over charcoal until beautifully smoky. Wrap it with crisp lettuce, cucumber, house pickles, and a touch of pâté for the perfect bite.

A familiar flavour, served in a way you probably haven’t experienced before.
