Ever wondered what “rice polishing ratio” means on a sake label?

Before brewing begins, rice grains are polished to remove their outer layers. The amount removed plays a huge role in the final flavour.

Higher polishing ratios tend to produce lighter, more aromatic sake, while lower polishing ratios create fuller and richer styles.

It’s one of the key reasons different types of sake can taste so distinct.
