Nothing beats the heady comfort of truffle treats in the peak of winter. In celebration of arriving at , we've taken over our menu to pair select dishes with freshly foraged black .
Alongside some limited-time bounties like our "Truffle" cocktail and truffle croquettes, we're hosting our friends at for a presentation and premium tasting of their beautiful single malts. Join us at 4pm next Saturday for a welcome Hot Toddy to enjoy while Cape Byron takes us on a spirited journey through their Australian curated spirit - accompanied by some moreish treats and licks for your pleasure.

The Artist's Garden. This season, Flaggerdoot's daring cocktail menu gets a garden-inspired spin. Led by our spirited cocktail team, uncover evocative in-house distillations like the 'Reading in a Lavender Field'.

This cocktail is an artful distillation of lavender-infused Roku gin, mandarin liqueur, St Felix Yuzu green tea, ginger, honey, orange blossom and egg white.

Created by Note Design Studio - a collective of Swedish architects and graphic and product designers - Flaggerdoot's La Chance Tembo Stools combine a wood and metal body with a solid cork seat. The designers drew their inspiration from African tam-tam drums; Tembo means elephant feet in Swahili.

Tembo was originally part of an exhibition held by Note Design Studio as a creative stunt. The concept was to produce, in real life, the various doodles that the members of the group had in their notebooks, however crazy they might be.

The colourful and sculptural creations were to define Note’s identity and originated their career as product designers.

Experience our new whisky! A collaboration with renowned pastry chef Jordi Roca of three Michelin star restaurants El Celler de Can Roca, this release brings the worlds of chocolate and whisky to life. To create the first limited edition whisky in a new annual release series, The Macallan Whisky Maker Polly Logan embarked on a unique journey to Girona, Spain, where she immersed herself in the world of chocolate, exploring the chocolate-making process and uncovering the distinctive flavor profiles at Casa Cacao.

Polly worked with Jordi Roca, owner of the famed chocolate boutique and hotel, Casa Cacao and the youngest of the acclaimed Roca brothers. As part of the exploration, she also spent time with the master chocolatier of Casa Cacao, Damien Allsop.

Through this unique experience, Polly took inspiration from the duo’s passion, knowledge, and creativity to create The Macallan Harmony Collection Rich Cacao. She explored The Macallan’s maturing casks to seek out whisky with rare indulgent chocolate notes that would harmoniously pair with fine chocolates for a rich and unique tasting experience.
