We’ve been deep in wine pairings lately: tasting, tweaking, and building a lineup that truly works with every dish.

For this one-night Mediterranean feast,
we’re serving 6 starters, a main, and a dessert;
and each course has a wine chosen to move with it.

Some cut through richness,
some soften and round,
others mirror the spice -
each pairing designed to complement the variety and abundance on the table.

From crisp French bubbles,
to a sun-filled Spanish white,
a vibrant Italian red,
and a deep Shiraz from Coonawarra -
